itunes blocks this function since itunes is the tool with one way to transfer files from itune to ipod. you must utilize other tools to achieve that. There’re couple of tools for transferring the files between ipod and computer (for backup)depends on your demands, e.g transfer only songs/videos, transfer photos etc. You can have a look of below review site, hope it useful.

  3. Share an ipod to pc transfer
It can backup iPod video/audio files to computer, you don’t need to worry about losing anything.
It supports so comprehensive iPod devices, including iPod Touch, iPod Touch 2
    You can have a try:http://www.aiseesoft.com/ipod-to-compute…
here is how to use it:
first you need download this iPod to Computer Transfer.
then plug your iPod to your computer and this iPod to Compouter Transfer can automatically find it.
your just need to pick up all the songs you need to transfer and click transfer button.
then you have your iPod songs on your computer.
    Hope it useful to you!

The most convenient and secure way is to use an iPod-to-computer transfer program to help you, like this handy one called Tansee iPod Transferhttp://www.gutensoft.com/Utilities/Tanse…
Many of my friends are using it for its easy and safe transfer. The whole process goes as follows:
Firstly install this program on your computer. When you plug your iPod Touch to the computer, this program will instantly display all songs and videos on the iPod.You simply select what you wish to transfer and click “Copy” button. Done. All your selected files will be copied to your computer safely. Now you can easily add those songs and videos to your iTunes library. See detailed guide.
More importantly, this won’t overwrite any original files on your iPod. And all song names are preserved.
Here is step-by-step guide on the whole process:http://gutensoft.com/Guide/How-to-transf…
    Best luck!

Here is an easy way many of my friends use. That is to use this iPod to computer/iTunes direct transfer programhttp://ipod-tool.com/ipod-software/jobos…
It was designed to help transfer music, videos, photos, playlists, podcasts and more from iPod to computer and iTunes. So you can use it to transfer music from your iPod Touch back to your iTunes in a direct way. Then all files are on your iTunes, and you can sync smoothly without deleting any files.
It works great with all windows systems. Easy and fast. I recommend you try it.
    Best luck!
